Can I use one 6+2-pin power connector when a graphics card requires one 8-pin connector?

My PSU is a Thermaltake Smart M750W. It has two 6+2-pin power connectors. I currently have an MSI GeForce GTX 660Ti graphics card that uses two 6-pin power connectors (so the two +2s are not used). I want to upgrade my graphics card. I'm considering the MSI GeForce GTX 1060 GAMING X 6G. The GTX 1060 requires one 8-pin power connector.

Can I connect just one of the 6+2-pin power connectors to the GTX 1060?

Yes. Technically, your Thermaltake Smart M750W has 2x 8-pin PCIE power connectors, wherein both 8-pins are split as 6+2. Using the 6+2 = using an 8-pin PCIE power connector which your planned MSI GTX 1060 GAMING X 6G requires.
