PC crashes and restarts instantly when playing games after installing new graphics card

I recently installed a new graphics card (gtx 1080) and whenever I boot up certain games, eg. Overwatch, CSGO, after 1-30 minutes my PC crashes and instantly restarts. I've played other games that have run perfectly for longer than 30 minutes (PUBG, Assassin's Creed Rogue, Witcher 3)
Here is my current specs;

I originally thought it was my CPU overheating as it was running at over 80C whilst playing the games so I cleaned out all the fans and reapplied thermal paste. My CPU now runs at 70C at heavy load so i dont think that is the problem.
I also thought it may be a problem with my RAM, so i ran memtest and came back with no errors.
I have tried reseating the graphics card.
I ran Display Driver Uninstaller after I had installed my new graphics card (could this be the problem?)
I think it may be a problem with my PSU, Im running a Corsair GS600 600w power supply, or could I have a faulty GPU?


 
Solution
Try a BIOS update on the motherboard, if that does not help could be a driver issue. Why would you run the driver uninstall AFTER you install the new card, that will wipe the drivers off the system. Did you re-install the drivers? Has this ever worked with the new card? Try doing a system restore to before you ran the driver uninstaller utility.

Ok so it seems I'm a few updates behind on my BIOS, gigabyte website is extremely slow and not loading atm. I'll try again tomorrow. I've never updated BIOS before, is it safe to update inside windows using gigabyte @BIOS program?

And I was to eager to install my new graphics card i completely forgot to uninstall current drivers. I was under the impression running DDU after would still remove ALL nvidia drivers? is this not the case? and yes i reinstalled all drivers for new card.
