Well i'd suggest you to go for 6GB Variant only if your playing at 1440P or 4K resolutions.
For majority of new games you might need 4GB of VRAM9FOR 1080p) atleast but lowering a few settings might make the game work at excellent FPS at 1080P..!!

+1 for the 6GB any day of the week. The 3GB is not only lower VRAM but has watered down shaders and other specs. And to be honest i wouldn't recommend below 4GB at this price range to begin with even at 1080p plenty of games push above 3GB and you'll want the headroom to avoid issues. If the 1060 6GB is too expensive, consider the RX 570/580 4GB variants, they often hover around 1060 3GB prices and typically outperform it and of course don't lack in VRAM. Hope this helps :)
