I went from 4k with the cards to 1080 p 144 hz b/c with the 4k the cards were overheating and thinking the safe spot would be the 1080 p or is it overkill ??

I don't see that as going to help, in modern AAA games the gpu load will be very high still and high fps puts extra load on the CPU so unless using water cooling of some description you will have more CPU heat in the case.

Its a overkill. 1440p 144hz i bet you can achieve with that SLI.

I agree for 1080 p games are getting more and more vram hungry , from what I've seen in modern games so far looks like 1080 p is the sweet spot to max out the modern games without the thoughts that is going to slow the games down to achieve the game's best performance
4k the cards will overheat and distort the video's game play
2k the cards would run fine but , I bet in a yr or 2 you will have to upgrade the cards again next yr so 2k wouldn't help
