You can use gigabyte Q-flash Plus to bios update from USB flash stick without needing a cpu. Of course this means first dl and save the new bios to USB which may or may not be an issue. According to Gigabyte, all their 100 series mobo's as of Q4 '16 are supposed to be kabylake supported.

It's definitely a gamble using a skylake board, it could easily be a off the shelf item bios'd before Q4' 16, older stock, but seems possible to work around. Considering the cost factor, aggravation factor, frustration factor and having the exact right bios before it all starts, the wisest course of action would be to simply not get a 6th gen mobo, but opt for a 7th gen mobo that'll be compatible right out of the box.

The Acer monitor is still just...

Well, everything is compatible, but...

You'll have to update the bios one or more times for it to support the kabylake chip, and well, I wouldn't recommend a blower style video card like what you're going for in a micro ATX or larger chassis. Blower style cards only mostly shine in mini itx chassis, where the hot air has to be exhausted out of the case instead of choking up the air inside.

If you're really going all out budget, I suggest going for something like the Zotac GTX 1070 mini. It's one of the cheapest, and still overclocks like a champ.

Also, well it's a matter of personal preference, but I hate having my games stuck on the loading screen for forever. If it was me, well I would get an SSD, sacrificing that 1 TB of hard disk space.
If you hate long loading times like me, we'll go for it. If you can put up with it, and/or maybe like your budget doesn't allow for it, then maybe not.

100-series motherboard and Kaby Lake is the biggest issue that stands out. While many motherboards are being revised, not all of them are and there would be a lot of incompatible 100-series motherboards still out there in the ecosystem. Unless you know someone who can lend you a Skylake CPU, get a 200-series motherboard and avoid the issue entirely.

The Acer monitor is still just a 1080p/60Hz monitor, you'd be better off downgrading the gpu to a Rx580, and using the extra cash on a decent ssd, you'll see no measurable loss of performance since the 1070 is far in excess of the monitors top requirements, the Rx580 being less powerful, but still more than able at that resolution
