Soooo.. to start off, my main specs are
MotherBoard - Gigabyte X58-USB3
GPU - GTX 970 Asus Strix
CPU - I7 920 (Yes, I know, could be better)

Now, I've read in many places that the i7 920 works very well with my gpu, but only when the cpu is overclocked to 3.6-4.0 GHz, which is what Im trying to do. However, no matter how many methods I try, I cannot get into the bios to start fiddling with overclocking. I have tried USB and ps/2 keyboards etc, tried F1-F12 buttons, DEL, ESC, etc. Nothing works, I know overclocking with a program is not recommended therefor that's not what I would like to do.
Is there anything I'm missing? No matter what I try, I cannot get into the bios.

Check your motherboard manual for a dominant USB port. some motherboards have USB ports that are...
are you actively spamming the buttons from the moment you hit the power button?

Also, there should be a splash screen that tells you about what buttons do what.

Also also, check the mobo manual to find what button to hit specifically to get into bios.

If it comes down to it, you can disconnect your HDD manually (unplugging the cables for data/power) and boot. that will force your computer to look for bootable devices, giving you more time to figure out what to hit.

If you run Windows 10, you can start into UEFI from Windows. Sorry, but since I'm running a germen Version of Windows I don't know exactly how the Option is called in the US Version. It should be something like Advanced Boot Options.

Yes. I have a splash screen which pops up, telling me to click "DEL" however no matter how many times i spam the crap out of the del button, nothing happens.

Are you waiting to press DEL until the splash screen comes up telling you to? If so, don't, start pressing DEL as soon as you press power.

Done both ;/ I've mashed the button as soon as I pres power, along with pressing it only after the splash screen comes up

Check your motherboard manual for a dominant USB port. some motherboards have USB ports that are listened to even in post or bios. if you don't have the manual, change your keyboard slot to a different usb each time you boot and try to go into bios. do this until it listens, and goes into bios. make sure to spam DEL even before the computer shows something.

As MM_Ribosomal said, you can try disconnecting the hard drive to force the BIOS to start, but I would first try taking out the CMOS battery and starting up. It will usually enter the BIOS automatically. You might have to reset your clock and other settings after words. If you do finally get into the BIOS, make sure that your PS2/USB devices are enabled during bootup.
