Amd ryzen 1700x or i7 7700k with gtx 1080ti at 1080p 60hz for about 4-5 year? Also planning to overclock ryzen

No such thing as future proof in tech.

But for your choices... go with Ryzen 1700X and GTX 1070. After 2 years replace the GPU.

The 1080 Ti will be outdated within 1.5 years by 1180 Ti.
