For the Witcher III, you may not see as much of an improvement.
https://www.kitguru.net/components/cpu/luke-hill/amd-ryzen-7-1700-cpu-review/8/: technically shows about ~50% improvement moving from the FX-8370 to the i5-7600K (~45% if both are overclocked)...but that's using the Titan X Pascal. Yes, it shows the CPU limiting you at 1080p, but both are still churning out over 100FPS.
http://www.techspot.com/review/1209-nvidia-geforce-gtx-1060/page2.html: They tested your GTX 1060 with an i7-6700K (which, BTW, in the other site's charts blew both the FX chip & the i5-7600K away), but the GTX 1060 only managed to get to 73FPS, well under the limit for both the i5 & the FX chip. Based on how the CPUs stacked up when they used a GTX 980 (http://www.techspot.com/review/1006-the-witcher-3-benchmarks/page5.html), assuming you'd even see any difference at most it would probably be only a 10% drop, 15% tops...puting you around 60-65FPS.
Honestly, you're getting much better performance since you've upgraded to the GTX 1060, but (at least in Witcher III) it's going to hold you back too much to see a lot of improvement by switching to an Intel CPU. To get to the point where you'd notice a bump from a CPU upgrade, you'd have to buy at least a GTX 1070, if not a 1080/1080Ti, & unless you're planning on bumping up to 1440p or higher resolutions that might not be a good use of your cash.
