I would wait it out a little. The gains from a 580 over a (6GB) 1060 are not huge (generally <5%, unless it's DX12 or Vulkan where that gap can be wider). IF you *need* a card now, a 6GB 1060 will suffice. If you can afford to wait a month or more (my guess), then there'd be no harm in waiting.

For reference, 580's have been out of stock (for the most part) since late May
