That site wouldn't let me do anything beyond configuring. I had one that was € 1826, but I couldn't add secondary storage, and there was no way to copy and paste the info. You could definitely get a cheaper case and PSU in that build that would put it below € 2000.

What do you need the $5 fan for? It's a waste of money if you ask me. Also OP is in Greece so links to US stores will be of little use.

I would do something like this:

Case: BeQuiet! Silent Base Pro - 163.90 €
PSU: Seasonic Prime X750W - 179.90 €
Motherboard: Asus Strix Z270 - 209.90 €
CPU: Intel Core i7-7700K - 398.80 €
Cooler: Noctua NH-U12S - 67.90 €
RAM: RAM G.SKILL F4-3200C16D-16GTZKW 16GB (2X8GB) DDR4 3200MHZ TRIDENT Z DUAL CHANNEL KIT - 169.90 €
HD: 1TB Western Digital Caviar Blue - 56.90 €
SSD: Samsung 960 Evo M2.2280 - 139.90 €
GPU: MSI GeForce GTX 1080 - 679.00 €
Operating System: Windows 10 OEM - 110.00 €

Total: 2175.20 €

That gives you 325 € for whatever monitor and peripherals you want, but that will be a solid build.
