Best Linux server GUI for home server to run Vsphere Hypervisor

I bought a server, 2x xeon 16gb of ram, 10gb nic, 2tb hard drive.

What I'm looking to do is have a Linux GUI as the main OS to run Vsphere Hypervisor which runs other OS's like Plex, Cuberite.

So basically a Linux GUI, running Vsphere Hypervisor, which runs other smaller operating systems. Like I said, I would run Cuberite which is a C++ minecraft server OS. Maybe Plex for home media things, not the end of the world if it can't run that.

My setup right now is a Synology NAS for home media, Cisco ASA 5505 firewall, and the server obviously. Everything to work together and one eco system.

Requirements are being a GUI. Able to run Vsphere Hypervisor. Able to run Cuberite minecraft server OS. Being able to be expandable or lenient with future programs and related things.

My question is what server GUI to have everything run off of and work together as an eco system. Thanks and need some help because every different website has their own answer.

As far as "GUI", a lightweight one where it has a desktop but no need for it to have loaded with features, too taxing on resources. Just so it's easier to select which OS to run in Vsphere Hypervisor, I can use a mouse to pick it.
