A SSD will be a 2.5" device.
But, you have a better option.
Your motherboard supports M.2 ssd devices.
A m.2 device is about the size of a stick of gum.
It fits in a slot on the motherboard.
You can buy a 240gb sata m.2 like this for $107
https://www.newegg.com/Product/Product.aspx?Item=N82E16820147398
It has a sequential speed of 540mbps
The next step up would be a pcie m.2 like this for $128

It has a sequential rating of 3200mbps
It's not bad at all. I see you want a ITX build. Why did you go with that cooler though? You may run into problems trying to install it. I would go with the Cryorig C7 as it is low profile, and helps keep things cool and quiet. Since you are not oc'ing, no need to install a AIO. I also would go with a BLUE 1TB. Yes you lose 2 years on the warranty, but by this time, you probably will upgrade anyways, plus WD drives are very reliable. Other than that, should do you just fine.

Apparently the c7 is too tall according to the case specs and I thought a closed loop water cooler would be great in case if the i5 gets toasty with a small heatsink and fan

Not sure where you see that at. The C7 is only 47mm https://pcpartpicker.com/product/Lbhj4D/cryorig-cpu-cooler-c7, while the case allows up to 105mm - https://cougargaming.com/en/products/cases/qbxkaze/

The 7500 shouldn't get toasty at all, which is why it comes with a stock cooler. However, the C7 will be more quieter and still keep it cooler, by at least 20% if I'm not mistake.

Not to mention, if that AIO leaks, then you are totally screwed.

Love to give opinions ....I have no skin in the game.

Some thoughts:

Love ITX builds, and that looks like a good case.

I5-7500 comes with a perfectly adequate cooler.
Spend the cooler budget elsewhere.

RX580 may need more than 450w:
http://www.realhardtechx.com/index_archivos/Page362.htm
Also, because of the resurgence of cryptomining, the RX5--- cards seem to get overpriced.

GTX1060 is in the same performance class and takes less power. 450w is fine.
Look for one with blower cooler type cooling.
Such coolers get hot air out of your case directly.
Important in a small case.

I will never again build without a ssd for the "C" drive. It makes everything you do much quicker.
120gb is minimum, it will hold the os and a handful of games.
But, many things default to the "C" drive.
When a SSD nears full, it will lose performance and endurance.
240gb is the recommended minimum.

If you can go 240gb, or 500gb you may never need a hard drive.

You can defer on the hard drive unless you need to store large files such as video's.
It is easy to add a hard drive later.

Samsung EVO is a good choice for performance and reliability.

Most of the time, 8gb of ram is fine.
Still, though, I would try to do a 2 x 8gb kit.
The extra cost os not much . 2400 speed is fine.

I didn't think about the 580 needing extra power, could be an issue.

I prefer the 2.5" hard drives over SSD's purely for price over performance. I'm not too worried about getting an SSD.

I'll check out getting a 550w if anything and I might switch to a 1060, maybe the 2x8Gb sticks don't sound so bad

2.5" hard drives are typically used in laptops.
They are optimized for low power and battery savings, not for performance.
A 5400rpm drive is not suitable for the windows C drive.
Most of what windows does is small random I/O,, that needs low latency.
High latency on a 5400rpm drive is not good.
7200 rpm at least.
Even then the random I/O capability of a SSD is 50X faster.
