Installing old hdd into system with a clean install

To start this off, this is the first time I have replaced and am going to attempt a clean install.

So I am in the midst of rebuilding my current pc with new parts. Those parts being the ram, cpu, and mobo. I plan on doing a clean install of windows 10 on to my current SSD that already has windows 10 os. I also have 2 extra hdd with my files and games

My only question is how do I make sure I don't wipe my non-OS drives? Do I just keep them unplugged while doing the install on my SSD?

And will my HDD work with my system still if I plug them in? Will the games and files be able to run?

I believe Steam, Origins, and other programs are also on the HDDs, will they work or do they need to be uninstalled and reinstalled?

If the steam is already on the same hdd as the games I Shouldn't have to adjust setting right?

Also, side question. Is there anything i need to do my old hdd, or can i just plug them in and start accessing the files and other things on there? Is there something I need to do for the system to recognize them or ect.
