Second PC build choice help/debate/opinion

My first budget Pc costed me about 600$ in 2015. It's about time for my next build because my old PC can't run some of the games I'd like it too. So this time, now that im working for my landscaping business, I want to spend more money on this build. I'd like to spend not too far over 1 grand initially and then be able to upgrade to a second gpu, more ram, and more HDDs. All opinions are welcome on this thread. If you don't agree with one, tell me why. Here's what I've decided so far. (These are not final)

GPU: gtx 1080 (Manufacturer tbd)
CPU: Intel I7-7700k (needs to be good enough to not bottleneck two 1080s)
MOBO: TBD (two sli express with stable overclocking)
Ram: 16gb (manufacturer/speed TBD)
HDD/SSD: don't know alot about these so I will need help finding
Peripherals: Already got them
Cooling: Water-cooling (Manufacturer tbd)

Games I want to run and record at Max settings (that I can't already):
Ark: Survival Evolved
Arma 3
Rust (my crappy pc can't run this)
Dayz
Any new games that come out that I may be interested in.

OP, what exact parts do you have now? Would like to see if something can be salvaged. For example, if you have a quality PSU (though unlikely at your original budget), you can bring that to the next PC. And if you have a hard drive large enough that it can be used for storage on your new build, then you only need to get an SSD on the new build.

Im okay with spending over 1000 upfront. I just need a computer that i can continue to invest in years after i build it.
