1. I want to run Linux mint and Windows on the same 128gb SSD, while sharing 500gb each on the 1tb mass storage drive.

2. I want to know how to partition the drives

3. I want to know how to set up the mass storage drive so that nothing else (other than the file systems) is on the SSD.

You are in a lot of trouble if you don't know minute details how to do it, it's not easy thing to do and if anything happens to either OS you're apt to lose both.
If you manage it, second drive used only for storage could just be formatted to NTFS as both OS can read it and use it, nothing special is required.
