Hello there,
I am a gamer who has a budget of $2100 AUS and I want to build a fast PC that can handle high frame rates in FPS titles such as Overwatch, Battalion 1944 and Battlefield. I have been looking around at local Australian stores such as Scorptec and I need help choosing parts, I am looking for a red and black color theme if possible. I only really want parts from Scorptec because of the convince of driving there. I was thinking of getting a 1080 with an i7 7700k or an i7 7800x but I don't have enough knowledge on computers to know whats best please help me out thanks.

You'll get worse performance that way, and the CPU won't last as long.
I get brand safety, but the AMD CPU simply allows you to get much more performance for your money.
You can buy everything but the RAM from scorptec, you'll be forking over another $40 if you want to buy the RAM from Scorptec.

I believe you can change the monetary value to AUS but I'm not 100%(I'm at work on my phone).

With a low budget your probably can't go with the X299 build which is a 7800x and probably have to go with the LGA1151 7700k.

Right now stictly for gaming the 7700K is basically still the best though. Get a G2 or G3 PSU

Will you be overclocking? What resolution will you be gaming?

I do not plan to overclock and I am playing at 1080p on a 24 inch monitor

If you'll pay a bit more attention you'll also see that that list and all previous including yours don't include a monitor, is @OP expected to utilize anything above a 1070 at 60Hz?
Performance is pointless if you don't use it.
If I was going for just performance without a monitor I could do far better.
At 1080p Ryzen performance also takes quite a significant hit. Not sure why you're downvoting me for taking into account the situation...

I would prefer the i7 7700k, also I am more comfortable if the items are from scorptec so I can just pick them up there
