Need help around my new PC build

Okay, so I am new to the forums and this is my first post :)

And the reason why I came here is because I need some of you guys to help me around my new Gaming PC build, as well as your opinions, because this is my first ever PC-build. I decided to build it myself since I've found out it's always cheaper that way.
Also note that I have not yet bought a single of these parts and I'm still saving money.

Here are the specifications:
CPU: Intel Core i7 7700k
CPU Cooler: Cooler Master Hyper 212 EVO
GPU: GTX 1070 or GTX 1080
RAM: 2x8GB DDR4 memory
Motherboard: Asus STRIX Z270-E GAMING or Asus Z170 PRO GAMING
Case: Doesn't matter yet, I'll pick up any ATX case that seems good to me
PSU: 600W
HDD: WD Caviar Blue 1TB, 7200RPM
SSD: 250GB SSD
And for the monitor: a 1080p, 144Hz monitor, probably Asus VG248QE

What I'm expecting from this build:
- Running all games at least at 60fps for the next couple of years @1080p, Ultra settings. (I know it will exceed 150fps on some games)
- No lag or stutter

Why I picked 1080p and not 1440p: I've been researching a lot these days and I found out that it is better to have a 1080p monitor and higher framerates(144Hz), than a 1440p monitor and lower framerates(60Hz), "Feels more smooth"- What people said.

So, you might have noticed I'm unsure about some components, and that is where I need your help guys.

QUESTIONS:

1.) For the GPU: Should I take the GTX 1070 or GTX 1080? Will it be overkill for a 1080p monitor?
And is the GTX 1080 worth the extra money?

2.) For the motherboard: I found two motherboards:
Asus STRIX 270-E GAMING
Asus Z170 PRO GAMING
Both are ATX, which is what I'm looking for. They are compatible with everything, but which one should I take?
Does it make sense to take the Asus STRIX Z270-E over Z170 PRO? They seem basically the same, but the Z270-E is 120$ more expensive?

3.) The SSD: OK, so I've done research and I know a SSD drive is faster than a HDD drive, but where do I store what? Does Windows go on the HDD and games on the SSD or what? I really don't know. And how much SSD do I need?

4.) And finally, the monitor... Oh god.. I really don't know what I want to do. I want a 1080p monitor, 144Hz. Why I took 144Hz is because of all the screen tearing panic that I've heard about on the internet. I've heard 144Hz decreases screen tearing. VSync fixes it partly in-game, but then Nvidia releases G-Sync monitors which cost like extra 100-200$, which gets everything too expensive for me. What should I do??
I really want to know if my current build will cause screen tearing on my monitor or not, and how I can eliminate it if it occurs. GTX 1070 will run at about 100FPS in Battlefield 1, Ultra settings at a monitor with 144Hz refresh rate. Will the screen tearing occur? I want smooth gameplay... :/ , for Gods sake I will be paying this build around 1500$, and if I don't get smooth gameplay Imma kill myself lol. Cmon it must run smooth, right? Or should I just get a G-Sync monitor and not eat for a few weeks?

By the way, if something in my build makes no sense, like a GTX 1070/1080 overkill on 1080p, make sure to tell me that so I can take a different GPU. Or if I shouldnt take i7 7700k just for gaming..

I would really appreciate it if someone actually takes time to read all of this, and help me out, I'm
really struggling saving all the money now and doing all the research for my new build. BTW, I'm 16 so you know how hardly money comes at this age :)

Solution
The rest of the build looks great, just grab the z270 board and 1070/1080 whichever you can find in stock and near its normal price. Gpu prices are currently inflated right now due to mining strike.

Okay, so I've calculated how much power supply I need using two websites:
http://www.coolermaster.com/power-supply-calculator/
and
https://pcpartpicker.com

Both say I'll need 375-450W of power, but I'm still going for 600W in case I will be overclocking in the future or upgrading any of the components and just for safety purpose I want to pick a bit of extra power supply.

Do you have any recommendations for a PSU for my build?
I found some PSU's, prices are 35-50$, is that too little for a PSU?
Brand is Akyga.

Also found one "be quiet! Pure Power 10 400W ATX 2.4", price is 56$, with some pretty positive ratings, 4.8/5
Or if you think I should take another PSU, tell me.

The most you'll need is 550w. You won't need more than that trust me. If you want to keep your power supply for longer and not have to worry just grab 650 if you have future upgrades in mind. That also is an bit of a stretch too

Thanks a lot for taking your time to help me.

How about the rest of the build? Does it look good? Should I change anything else?

Okay, thanks. And yeah, I've heard about all the mining, just wow, people must be investing a lot in it, and probably earning a lot of money too. Guess I'll just wait for the prices to drop or I'll buy the GPU during holidays, hopefully prices will drop then.
