Also first time building a PC, I'd rather a more simple build to put together if it costs slightly more as it's a lot of money and I dont want to mess it up. Would this be good for first timer?

Also as far as windows is concerned, I've been told to copy it from my existing PC and put it on a USB, is that the best way to go and is there a guide anywhere?

The advantage of 4K is the pin sharp picture, but it only works well with very modern games, older stuff just doesn't have the high rez textures to use 4K to its best, so if you're only going to be playing very modern stuff it's no problem.
However, the downside is the low frame rate, current 4K displays are pretty well locked at 60FPS, and even the mighty GTX1080Ti can struggle at that high resolution if you push the settings up.
The advantage of a lower resolution-say 2560x1440-is much higher available framerates and lower GPU demands, a GTX 1080 will drive a 2K 144Hz display quite comfortably but the disadvantage is in new/er games where a 4K display will offer a sharper image.

Actually, for a first timer it's a good, solid, high end gaming build.

A few points:
Do you REALLY want to go 4K? I can source very good quality 60Hz 2560-x1440 displays for far less.
I'm not even sure if it's possible to game off dual 4K displays but even so, you'll only do so with sli'd GTX1080Ti's, one will just bog down with all those pixels to drive.
Personally I like to give my hardware some breathing room, so a larger, better ventilated case might be in order-your call.

I've worded it wrong sorry, I'm not planning to use both monitors to game, one isnt even 4K. Just one to game with and the other to watch streams, youtube on the side. I value picture quality and FPS very highly which is why I wanted to use 4K, do you not believe it is worth it?

And with the case, will it matter to the health of my PC using a tighter case?

As long as the case has decent ventilation size isn't too much of an issue, but I'd look for a replacement for the little Zalman T2, with so much power in the build I'd be happier seeing at least dual 120mm front intake fans and one 120mm rear exhaust.

I was told about the power supply before, but the person who recommended the build in the first place said that the power supply is more than enough. Do you not believe that?

Could you recommend a case and fans that are cheap but good? I really dont have a clue when it comes to PC's.
