Not sure how to configure 2x ssd. One for os and boot and one for games and storage

I just built my first pc and I bought 2x ssd disks 125gb and a 500gb.

I just installed every component and only my 125gb which I installed windows on.
Now I want to install my second 500gb ssd into my system but I am not sure what raid/ahci I should use.

I want to keep my 125gb ssd as a boot disk where I have windows and drivers installed and then install games on my 500gb.

Also if possible, if my 125gb ssd fails I would like to have my 500gb secured. Eg I can reinstall os on a new sdd then insert the 500gb ssd again so I dont have to reinstall every game. - Not sure if this is raid 1.

Just power off and connect the SSD. No RAID or other setting.

Not possible. You can make an image of the OS drive on the 500 one, but... I would not recommend it.
If the 250 failed, you'd have to reinstall the OS and games.
What you can do is saving the games status folders on the 500, periodically.
