I just bought a 2017 HP omen laptop that has a 128 gb M.2 SSD along with a 1 tb 7200 rpm hard drive. Is it possible to replace the hard drive with a Samsung 850 evo 2.5? Or can you not have two ssd drives in a laptop. I couldn't find information on this topic, furthermore leading me to believe it is a stupid question lol.

There should be no reason you that you couldn't replace the HDD with an SSD unless the manufacturer has locked out other manufacturers drives. This is something they used to do but I believe they no longer practice so you should be good to go.
