While playing heavy load games my system completely reboots, as if someone just hit the restart button, no bsod, nothing.

I've narrowed it down to the GPU or the PSU. I just can't tell which :-/

It is definitely not a temperature issue, under load literally seconds after a random restart, temps will be around the high 40,50C mark.

Playing Batman Arkham Origins, the PC reboots roughly 20 mins in.
So I disabled the GPU and ran the onboard Intel Graphics card, this time playing Super Meat Boy; it was running at 20FPS so I'm guessing that's stressful enough.Anyway, no reboot

So now I can't tell which is at fault. Is my PSU failing to provide high enough wattage for a GPU under heavy load? Or is my GPU failing me?

Tech Specs:

Intel I7 4770K
Kingston 16GB RAM
MSI Gaming 3 Motherboard
GTX 980
Corsair CX750 Watt PSU

It's most likely the PSU. It's either not providing consistent power or isn't capable of providing enough power to the parts. As J_E_D_70 said, hard restart under load is typically a poor quality PSU, which most Corsair PSU's are. I've never had a good experience with any of their PC hardware and don't recommend the brand, especially for vital components. The capacitors that Corsair's source uses in the CS and CX line up tend to go bad within a few years. I would recommend buying a new PSU from a retailer who doesn't have a restocking fee and trying it out. It there still is a problem, it could be the motherboard, but that's multitudes less likely than the PSU being at fault.

Also, the fact that your GTX980 is running at a cool 40 - 50 degrees Celsius while running Super Meat Boy at 20 fps supports the hypothesis that your PSU isn't delivering the power it should be.
