My first build - Can I make it cheaper without lowering the performance by too much?

This is my PC build. I want to be able to play smoothly at high-ultra settings with 120+ fps on 1440p. I will be using the PC primarily for gaming and streaming.
I already have some ideas but I don't know if they will allow me to play with these settings:
- Downgrading the CPU to an i5 7600k
- Downgrading the graphics card to a GTX 1080
If there's anything else unnecessary in my build that I can change please tell me. My budget is only about $100 off and if you think I shouldn't change anything then tell me.
