1 stick 8GB VS 2 sticks 4GB RAM

I would like to know if it's better to have one stock of 8 GB or 2 sticks of 4GB RAM. BECAUSE of the duel channel thingies. So what is better?

Assuming you have a CPU that has a dual channel memory controller then the two 4GB sticks will offer around two times more bandwidth than a single 8GB stick of RAM. On benchmarks you will see around 10% better memory performance on average, it varies on the benchmark with very few situations realizing the benefit of 2 times more memory bandwidth.

2 modules will run better than 1. Not necessarily significantly, but your PC can effectively process more data transfer with 2 modules.

Imagine it's like pouring 2 bottles of water into ONE funnel (1 RAM Module). The funnel may likely overflow or bottleneck. With TWO funnels however (2 RAM Modules) you have two open pathways for both bottles of water to fulfil.
