I'm thinking about getting a Zotac mini gtx 1080, would it be wasted on a 1440p 75hz monitor? I originally bought the monitor for a gtx 1070 but the price jumps hit me like a truck. Should I just wait until the 1070 returns to normal prices?

First, no a GTX 1080 would not be overkill at 1440p running at 75Hz/75FPS. In fact in several heavy GPU dependent games like Witcher 3, Dues Ex, Sniper Elite 4, Far Cry Primal, and BF1 it's right in the honey hole of those. Second, there is no end in sight to the cryptocurrency mining craze, so you may be waiting a long time. Of course it could all crash tomorrow returning GPU prices and stocks back to normal (and flooding the used GPU market with cards).

I made the decision to sell my SLI GTX 970s for a lot more than they were worth two months ago and buy a 1080Ti. Now that IS overkill for a 1440p 75Hz monitor (overclocked from 60Hz). So if you have a recent generation mid-tier or above GPU and live in a nation where the cryptomining craze has caused even used GPU prices to soar in value, dump yours asap and take the money and run!

With that said you need to move on a GTX 1080 soon because the miners are now focusing on those GPUs as everything else is out of stock now or priced in 1080 territory (RX 580s, 1070s specifically).
