I got this keyboard not even a month ago new from amazon. I was just changing up the lighting options when I noticed my "U" key never changed back. Has anyone seen this before or is this a burnt out rgb?

It's really hard to tell on camera but in real life it's very noticeable. Just compare the U to the Y key.
Thanks

Last thing to try: press the brightness button, just left from the Win lock key and look if your U key follows the same brightness as the rest of the buttons. Also try the dimness with different colors.

If this doesn't help either, just RMA your KB. There's nothing you can do to fix the LED inside the KB.

In my Skylake build, i also have Corsair Strafe RGB KB with Cherry MX Silent switches and mine has been in use for 4 months without any mayor issues.

While all the LEDs work just fine on my KB, very rarely the Corsair Link doesn't detect my KB on boot up. Fixing it is simple, i just need to set my KB to legacy mode (by pressing F1 + Win Lock key) and after that, return my KB back to normal mode by pressing the same key combination. It takes 5 - 10 seconds before Corsair Link detects my KB and i can again enjoy my custom LED light show.

If the different colored LED annoys you, RMA your KB.

Sorry I don't think I explained well enough. The problem isn't my pc not recognizing my keyboard. The RGB itself in the U key is noticeably dimmer than all the other keys. I'm just not sure if this is a common thing or if there is something wrong with the keyboard itself. I tried what you said about putting it in legacy mode. It is still an issue.
Thank you for the fast reply
