At resolutions above 1080p, Ryzen 7 actually performs practically identically with a 7700k now, heaps of optimizations have been made since launch.
And yes, you should be able to max almost everything.
The case you suggested is meh, I'd go with the Dark Base Pro 900 personally, easily the best case on the market atm, dead silent, includes 3 of the best, quietest fans around, has a tempered glass window, noise...

Route I'd go can swap back to the 7700k if you wish, but definitely change the GPU and PSU (your GPU would be very loud and rather slow, and hot) and that PSU is better quality by a bit and a newer design and more than big enough

Should be a very nice monitor it's 75hz but I don't think that can be a negative.

16GB is all you need, you should go 1440p 144hz though.
The 500GB SSD and AIO are overkill too.
If you're not going at least 144hz 1440p with that build you're wasting your time.

Wow, thanks guys for the speedy responses. I really do appreciate it. Should I really go with a Ryzen 7 though? From what I've been reading it isn't as great as a 7700k for gaming. Would I be able to run games at max settings with that monitor Chugalug? Did I pick a good case? I was also thinking about getting a sound card.

Settings don't much effect a CPU. Ryzen is more than capable in any game and the fact it has double the threads let's it stream without much if any performance hit. Also would edit vidoes faster I'd you do anything with them after the stream
