I just purchased an Intel i7-6700 and am going to build a system around it. (Never done this before!) My needs are fairly simple; I'm not using it for video editing or super hardcore gaming or anything particularly demanding / unusual. I'm thinking it will have 16GB of RAM, an SSD for the OS & common programs, and I'll probably just be getting a GTX 1050 w/ 4GB.

Is there any good reason to get a different fan/heatsink other than the one that comes with it? I'm not overclocking (obviously). I guess I'm not sure if getting something like, say, a Cooler Master Hyper 212 Evo would really do anything for the system. Thanks!

There's huge difference between 212 Evo and stock fan, you can get around 20 degrees difference between these two. Other thing to consider is that stock fan needs to run at full speed all the time you do something more than browsing internet, so it is incredible loud. And better cooler will also make the CPU last longer, because it won't overheat. And getting better thermal paste will make difference too, around 4 degrees so I suggest getting Arctic MX-4, best cheap thermal paste.
