So currently I have one Samsung 960 Evo 250GB ALONE, It is set up as my boot drive for windows, and everything...

So I was going to get a 2 TB hard drive how do I make the HDD the boot drive for everything except: Windows, Google Chrome, and my games (CS:GO, Overwatch,Player Unknown's Battleground, etc.).

Solution

You don't make the new HDD the "boot drive".
Leave the SSD as it is now, and put other things on the HDD.
