Is this a good PC Build? (Gaming, Streaming, Normal use)

This is the build I have picked out, but please read below first.

I've put together the best that I could find for my budget ($800 MAX, not counting GPU as I already own the GPU in the list). Now I would like to hear other opinions on the build and possibly find issues that I didn't pick up on. (Compatibility, mainly).
While my main focus is gaming, I would prefer an AMD Ryzen CPU because I sometimes do streaming and I use a variety of other programs such as editors. I also do other types of work and multitasking.
While I do care somewhat about aesthetics, I prefer functionality and pricing.

For streaming get the 8 core and use the stock cooler to overclock to 3.7~3.8Ghz. Also get faster RAM as it reduced the latency between the CCX.

I can overclock that much safely with the stock cooler? I've never OC'd before so I'm kind of nervous about doing it to be honest. Also, would the stock speed still beat out the R5 1600x for gaming with the faster RAM? Thanks.
