Ryzen 1600 vs 1500x for gaming

I'd go with the 1600. They both have the same OC limit but the 1600 has more cores. It is capable of better performance in the minority of games which are mult-threaded well. As the percentage of multi-threaded games has increased a considerably over the last few years. It makes sense that the Ryzen 5 1600 will have a longer useful life. As, more cores and more threads is likely to become more important not less.
Since there isn't much of a price difference. It makes no sense to not buy the 1600. $25 won't make much difference in the GPU space considering how ridiculous the prices of mid range cards are right now. If price was a big concern. I'd say buy a Ryzen 1400 over a 1500x as they have about the same OC limits. To me, the 1500x is for someone whom does not want to overclock. If you are willing the overclock. The choices you should look at are the Ryzen 1400, 1600 or 1700. As the more expensive x models make no sense.
