GTX 1080 Ti not running as well as GTX 1070

Morning all.

About 6 months ago, a friend of mine had a build created for him (cost him around £2500). The rough specs are, 6700k @ stock, EVGA 1070, 32GB memory, etc. Last month, after months of saving, I built my PC for gaming, recording, editing, steaming, etc. (Specs should be shown end of post) Now, something we like to tease each other about is how many FPS we can get in Minecraft. His PC can, without any problem, reach 1500 FPS most of the time. In environments where there aren't too many objects to render, over 2000, and at one point he hit 5000 (while staring at the ground).

Now, me, with my newer CPU (which I have since underclocked due to high temps), and supposedly far faster GPU, even with half the memory he has, I've never been able to hit 2000 FPS, idling most of the time around 300-400. I was going to let this go, but I saw another Minecraft player yesterday with their 1070 running an average of 500-600 FPS.

My question is, why isn't my (supposedly) far faster system destroying the FPS they manage to get in-game? Obviously, there is the argument of settings and that, they both run at default graphical settings, same as me. And I've even lowered the settings massively, still cannot beat their FPS.

Do I have a faulty component somewhere? Are EVGA cards that much better than my Gigabyte? Is it because I missed some obscure optimisation that I should have done while building my PC, compared to his being built by professionals?

ok, have you seen this reported frames your friend keeps boasting about... and you state nothing of which cpu you yourself have.
and why would you underclock rather than getting a cooler which can keep your rig cool baffels me.

the differences between the performance given in minecraft between the companies EVGA, MSI, ASUS and so one are minute at best. Let your systems compare on a more valid ground like 3dmark or something... random fps count from minecraft seems utterly pointless to me.

Yes, I've seen screenshots of the frames he keeps talking about, I know these are legitimate. I do have an H55, but temps were still spiking, so I reduced clock speed to lower temps until I can purchase a better cooler. Forgive me, I thought my system would be displayed at the end of the post - it must be signature I'm looking for. It's not "random" FPS counts I'm going off of, it is average frames at certain times in game. In other words, I'm trying to find out why my supposedly more powerful rig isn't performing as well as his less powerful rig.

My system is running one monitor 1080p 144hz, one monitor 1080p 60hz. His is running an ultra wide 1440p 144hz monitor, and a 1080p 144hz monitor. Yes, this is definitely a 1070 he's using although it doesn't sound like it, loll

My CPU temps aren't going outside of 35-40 degrees Centigrade while I'm typing this reply out

that was at idle on stock speed? 7700K stock speed is 4.2 ghz, the 7700k is also reputable for being a hot chip... i would perhaps get another beefier cooler. something with a 240 mm radiator..

I suspect the xmp on the ram and the downclock of your cpu is not giving you the desired performance...

so clock your ram to 2133 and the cpu to 4,2... you should then see a better performance

My RAM has been running on 3333MHz @ CL16. If I go to 2133MHz then I will get that speed but @ CL15, meaning that the RAM will in fact be slower... The performance difference was there even when my CPU was clocked @ 4.6GHz, before bringing it down...
