So i will be going on vacation, but i want to leave my bitcoin mining rig on, but is it healthy to leave a gpu running at 76C for 3 weeks straight?

Nope, that doesn't change anything. If you've left it running for an extended period (e.g. a day or more) before and found that it never goes higher than 76C, that's fine. Really, even if it started to overheat the card should throttle/turn off before it damages itself anyway.

just for clarification, it is a gtx 1080. does that change anything?
