Gtx 780 sli or gtx 1060 6gb

1060 6GB will be a tad better than a single 780. Plus it has more VRAM which can help with certain settings/resolutions in games. Both options are solid for 1080p. I would say get the 1060 6GB; slightly better performance than a single 780, more VRAM, and SLI is finickey and doesn't work with a lot of games, so the second 780 will be wasted some of the time.

I would say the 1060 would be a lot better in newer titles, the 780 really does not hold up very well in newer titles from regression testing I have seen. 780s in sli would likely perform better in games with proper sli support, but proper sli support in games seems to be more and more rare as the years go by and it looks like that trend will only continue. Also 780s in sli will have more than double the power draw of a single 1060.
