Not living up to comparison?

Hi,
I have a pc that has:
i7-4790k 4.5hz
ASUS Gtx 1070
G.Skill Ripjaws X Series 4x4GB
ASRock Fatal1ty 1150 Motherboard

As i got a 144hz the other day ive let my pc run free past 60 fps. However, ive noticed that my pc dips below 60fps alot on games like Overwatch, Mafia 3 (i know this game this broken), and many other medium-heavy games. During Overwatch, it runs at about 80-110 fps but in some moments it goes to 70 then even below 60. Am i missing something? i check other peoples benchmarks on games and theyre way higher than mine!
From what others have said to me and from what ive watched, my PC should crush most or even all games on Ultra (or similar scaled) settings. Im just not getting what theyre expecting or what im expecting. Ive been playing overwatch ever since i got my 144hz monitor and im running on Ultra settings with 100% resolution scale. And im only getting 90-100 with major dips.
Please help this is bothering me

I ended up DMing TechofTomorrow on Twitter and he actuslly helped me out and gave me some advice surprisingly... told me to wipe my SSD and reinstall windows 10. Which i did and it actually did do a noticeable positive change.
But ill ask you what i asked the one above,
What is XMP Profile? What does it do? And how can i find it under my BIOS?
