I would not use mouse acceleration at all. Chances are that you play games that require some sort of aim; mouse acceleration will just hinder your ability to build muscle memory which is key to good aiming.
As for polling rate I do not think it matters much. I just use the default 500hz but I'm pretty sure it just comes down to preference so I would try 500hz and 1000hz to see which one feels better in-game.(1000hz may be unstable so 500hz would be your best bet)
