Yes, very good choice. The GTX 1080 will do 1440p gaming perfectly, and the G1 gaming is a good cooler design overall. An EGA FTW is a good alternative in case you don't like some aspect of the GPU. Plus, EVGA has awesome customer support as well. Which brand you choose really depends on your personal preference, the performance difference between different models of the same GPU core is quite minimal.
Also, get the Ryzen 5 1600, the value of Ryzen is just unbeatable right now. i5 7600K won't last as long as the 1600 would. If you're gaming at 60-120 FPS, the 7600K doesn't make much sense.

I personally think the 1600 is worth it, but not the 1600X. However, since you already have a cooler, you may want to go with the 1600X. But if you can get the 1700, then that'd be even better. But honestly a 1600X over a 1600 is a waste of hard-earned money. It's either the 1600, or the 1700. When overclocking, the gap/difference between the 1600 and the 1600X is almost nil.
