I have an i5 4690k processor. I've read around on some other threads people posted that some i5 processors only support 1333/1600 MHz. I want to buy 2x8 GB RAM of 1866 MHz but that is going to result in 3732 MHz which is waaay above 1333/1600 Mhz.

I'm wondering what should I do here ? And if anyone can explain to me how this works since I'm kinda confused and very new to this :(

You don't double the ram speed , 1866 is 1866 max.

The ram will work fine. The chip supports upto 2400 ddr3 , the max speed will depend on your motherboard model more than anything

Worst case scenario is it will run at 1600mhz rather than 1866
