single big xeon vs dual xeon for video editing

Alright, 1 big xeon or 2 xeon 26xx family processors to spread the workload to video edit, work on a spreadsheet, internet??? figure a budget of 4k to 5k for the processors.

New from top to bottom with a 7k budget for all. If I get feedback that it's worth the 2 processors, I may break for extra money, otherwise we'll hold the line at 7k.
