I3 7100 with GTX 1060

I have an I3 7100 and I am not sure if I should got the 3gb or 6gb version of the GTX 1060. I will be mainly playing fps games such as: Overwatch, Call of Duty, Battlefield, Rainbow Six Seige and maybe even a bit of PUBG and GTA 5.

The 7100 is pretty decent gaming CPU for 1080p alongside a 1060.

I'd not recommend the 3gb as it's just a crippled version of the 6gb, with not only fewer memory, it's specs are a bit lower as well. If you are set on a 1060, go with the 6GB version. If not, maybe you can get a 580 4gb, 8gb... GPU prices are crazy at the moment, unfortunately.

The higher the memory is the better it will be. Even more if you want to play other resource-consumer games. BUT be aware that the graphic card can be bottlenecked by the CPU.

You can also think about replacing the CPU to avoid that and use the GPU at its full perfomances.
