my monitor 3440x1440 100hz samsung 34cf791, Ryzen 1700x
Well the big dilemma, my budget is about 500 € approx.
1 - amd vega x64 500 € approx.
2 - 1080 custom on the 450 € approx.
3- 1080 Gigabyte GeForce GTX 1080 Xtreme Gaming Water Cooling 8GB GDDR5X 550 € approx.
4- I do not know if I can stretch to some 1080 ti, although it's complicated xD, 650 approx.

Solution
GTX1080Ti class is the better pick for 3440x1440.
If you like to max everything in todays game while maintaining 60 fps as minimum, GTX1080 is only up to 2560x1440.
I know... I am on GTX1080 +2560x1440.
Even with GTX1080, on some games, I hat to lower down or deactivate some options to make it above 60 fps on some games e.g. Witcher 3 with ENB mods.
The GTX 1080 will be enough for many, but not all games to maintain 100FPS average at 3440x1440 resolution (matching the monitor's 100Hz speed). If you can swing more for the 1080Ti you'll be happier long term. But if it's too much of a stretch, that Gigabyte 1080 will do the job. You may want to seriously consider getting the new AMD RX 64 since it is roughly equal to the GTX 1080 and your monitor is FreeSync.

I see no point in going for the Xtreme Gaming Water Cooling 1080. bunch of extra cost for little extra power.
a 1080Ti would be ideal, a vega x64 is also very interesting since your screen supports freesync
a cheap custom 1080 would probably get the deal done (might need to reduce some settings from EPIC to VERY HIGH at times)
