First... RAID is not a backup, it's a hardware redundancy so you can have a physical HDD failure, and still operate.
RAID 0 is a striped set. It will write data across all the drives. This could boost performance, but if you have a drive failure, ALL the data is lost.
RAID 1 is a mirrored set. It will write the same data on both drives(simultaneously). If one drive fails, your data is still intact on the other drive, and you can replace the failed drive, and have it rebuild the drive.
