Seeking recommendation for PC game that is cooperative for 2-4 people online, long-term adventure, maybe RPG?

I have a 10 year old son who loves video games, and I am trying to find something we can play together. When I see online are massive multiplayer games, like first person shooters (Overwatch?), like Minecraft, that involve competing against other players and there's no specific adventure to go on.

When I was a kid, I recall playing RPG adventure games like Ultima 3 and Bards Tale where you spent months exploring dungeons and towns, working your way towards the ultimate show-down, building strength. I'd like something like that, but where you could have a party of 2 or more players jointly solving an adventure like that, but without the complication of other players like you find on an MMORPG.

I really don't want any games where I feel like I'm at a disadvantage competing with players who spend all their time on the game, I just want to play a set adventure against the computer, not other players. I mean, it seems like I have a choice between single player games or massive multiplayer online games, there's nothing in between for a small party to play online without other players in their own world, own adventure. Anyway, is there anything like that or do games nowadays force you into the massive multiplayer format?

This is hard one, and I've been looking for something similar for a long time myself. My son and I played Borderlands 2 for a while, but it can become a bit of a grind. It supports up to 4 player co-op and the game is hosted by one of the players. I found it really tough to find anything which is co-op, and does a good job at bridging the father / son age gap.
