So 2 days ago i got my Gigabyte GTX 1080 G1 gaming what was already curious is that the antistatic film was unsealed already and the card was not even inside of it but lying on top of it.

I just tried it out anyway and the temperatures went really crazy in the normal gaming mode which has about 1835 Mhz i think. Even with fans at 100% it went to 83 degrees fairly fast and stayed there because it throttled already to around 1650 Mhz and this was when i limit the games fps to 200.
Without fps limit the card would reach as far as 88 degrees in very short time with crazy coil whine before i exited the game quickly, the game was Warframe by the way. The funny thing is the fps numbers were not even much higher than my previous asus gtx 960 strix which did never go beyond 77 degrees yet in any game while my fans are sitting at about 60-65% at those degree ranges.
So i did an rma yesterday and now i am kind of scared of buying another gtx 1080, are they all so terribly hot that you cant even run them on 100% fans with a 40 DB noise ?!
My case is BitFenix Aurora with 2x 140 mm fans on the front, 2x 140 mm fans on the top and 1x 120 mm on the back.

Should i try my luck with another 1080 or just wait for the gaming voltas next year? While a game like warframe did not benefit that much during action i also tried doom which boosted me from 100 fps on the 960 to 200 fps on the 1080.

Without more details, it sounds like you got what is called an "open box" card. Where did you buy it from? Was it sold as open box or new? It could have been a problem card someone else returned it instead of trying to go through an RMA.

Did you take pictures of it when you opened the box? Also, a factory sealed box will have clear tape of sorts on each end of the box that can be opened and it must be cut with a knife or razor. Did you just open the box lid with no tape needing to be cut?

But the GPU itself is running way too hot, especially with all the fans going at 100%. It should be in the low-mid 70s under load:

The biggest question right...

The biggest question right now though is were you sold a card that was advertised as new or open box? If it was sold as new, then return it. But I just checked Amazon reviews, and there are nearly 20% of buyers giving it 1-star due to problems, some of which you describe (fans going to 100%, hot, etc.). I'd try another brand like ASUS, MSI, or EVGA. This is just way too many complaints for a GPU:
