5760x1080.... What gpu for over 60hz gaming.

I currently have the Asus VG248QE, if i get 2 more, would a non reference model ie EVGA Hybrid 1080 or 1080ti, handle 3x 144hz 1080p monitors? sure i could get 60fps but can i get 100hz each on titles like project cars, fsx, dirt etc.
Would having Gsynch monitors be better like the Asus 180hz g-synch model?

Ryzen 1800x @4,0 ghz,
AsRock X370 Itx,
2x16GB G.Skill Trident Z RGB 3600@ 3466mhz,
Nzxt Manta red/black
500gb M.2 Samsung Evo,
2x 500gb Samsung Evo SSD 2.5",
Nzxt X62 in the roof, swapped the fans out for 140mm Noctua industrial pwm ippc 2000,
2x 140 noctua industrial fans ippc pwm 3000 at the front,
Corsair Ax760i PSU,
Win 10 pro,

when playing fps games ill use 1 screen, but for sims ill use 3.
 
Solution
To run FPS games on one and keep the others at 144hz a 1070 would not be able to keep up, since you also ant to run sims on all 3 then your real option at this point is the 1080ti.
At 1080p your bottle neck moves from the GPU to the CPU. You have a good CPU that should keep the GPU fed, although the 7700k would do better. But with that being said, running 3 1080p monitors is 3k. Running 3k at 144hz wont be guaranteed with any GPU. But you should stay over 60fps with a 1080ti.

Have you considered a ultrawide? I have a predator x34 and it is incredible. No bezels, no hassle of getting games to support a 3 monitor setup. They are high, but if you are considering 3 gsync monitors, I think it would be foolish to pass up the 1440p, 100hz, IPS, Gsync panels.

When playing a flight sim, i like to use seperate screens to represent aircraft windows for say a rejected landing to touch and go and line up for a 2nd landing to line up the aircraft by looking to the left or right screens to adjust the turn.

Until 4k higher than 60hz comes where i can put more control boxes in a single screens and have more controls available, its a case of 3 screens, I dont want to try 2-way SLI as that would mean new case n board. Plus a few sims dont recognise 2 cards. i dont like 3 screens on arma as too much screen real estate and prefer narrower field of view.
i did have the 7700k and a 1070ti for 1 screen some time ago, but i needed more cores to stream BF1 via adobe pro & elgatohd60s.
