GTX 1080 or GTX 1070

Should I buy Gigabyte GeForce GTX 1080 Windforce 3X 8G for 510 euros or Gigabyte GTX 1070 G1 Gaming 8G for 440 euros?

I currenty have i7 4790K CPU, 16GB of RAM, Gigabyte GTX 770 Windforce 3X 2GB. Also 2 1080p monitors, but maybe I will upgrade one 1080p monitor to 1440p.

Yes, the jump to the 1080 over the 1070 is worth it at current pricing between the two (here in the US it's about $50 difference, so that's consistent with the increase in European prices). Cryptocurrency miners targeting the GTX 1070 have forced a lot of people to just go ahead and drop a little more on the 1080. I have yet to come across someone who regretted doing so. :)

Also in two current AAA games, Dues Ex and Watchdogs 2, a GTX 1070 does not hit 60FPS at max quality settings at 1440p:

^^Pretty big difference there between the two. That may be a hint of things in the future for that GPU, so getting the 1080 boost is extra insurance.

But maybe in a year or two GTX 1070 won't be enough. Now the GTX 1080 is 70 euros more expensive than 1070, that's why I was asking the question, if the price difference would be more then I would buy the GTX 1070.

I agree with this. I use a 1070 with a 1440p 144Hz Gsync monitor and I am very happy with that purchase. The miners have ruined the market for the 1070 though. For that small of a price difference I would just go with the 1080.

That being said, If you don't plan to upgrade from that 1080p monitor sometime soon it may make more sense to just save some money and get a 6GB 1060. It should run any game well at that resolution and it is significantly cheaper. By the time the 1060 is no longer good enough you will probably be able to buy a 1260 or whatever Nvidia is at by then and have better performance than a 1080 while spending about the same amount of total money.
