Can I use only one ram stick (8gb) then game for a little and then buy another ram stick

I was wondering can I use one stick of ram (8gb) for a short amount of time then buy another to duel channel them and would that work with my specs

Yes, and no.

It's completely possible and will in theory work. However due to manufacturing differences in sticks unless you get the same exact model the ram has a chance to not play nice together. Either being unstable and crashing or some cases not recognizing both sticks at the same time. Some cases the same model's won't work together.

When you buy dual or quad channel sticks that come in kits. Those sticks of ram are tested by the manufacturer to work together without issue.
