Like I said, the graphics card manufacturer doesn't matter - the GPU chip itself matters. On the other hand, the CPU manufacturer does matter, but only because the two major CPU manufacturers today use different configurations for their CPUs - AMD CPUs have more cores and lower clock speed, which helps them last longer, but unable to play at high refresh rate, i.e., 144+ Hz. Intel CPUs have lesser cores and higher clock speed, so they won't serve you as long, but will play at 144+ Hz better than AMD processors. This comparison is only relevant to current generation of both companies, not their future setups, when these things may change. But for today, Ryzen is a better deal for 60 Hz gaming, since it's more future-proof and is...
Well it really depends. Both companies have good products - it really depends on what your needs are.

If, say, you have a 1440p 60 Hz monitor, then a GTX 1080 would probably be the best choice right now, since AMD equivalent have just launched and are priced high due to mining.

If you have a 4K monitor, then a GTX 1080 Ti would be the card to have. No AMD equivalent is available at the moment.

For a 1080p 60 Hz monitor, you're probably well off with a GTX 1060 3 GB or, even better, a GTX 1060 6 GB.

For 1080p 144 Hz, you'd still want a GTX 1080, since the GTX 1070 is also overpriced right now.

It really does not depend on the company - I have not recommended any AMD cards because right now, the AMD cards which worth it are overpriced due to the mining.

Also, agree with maxalge here - get the 1600, the extra cost of the 1600X isn't worth it.
