New Gaming Rig Build - GPU Help For 3 Monitors

I would like to get into some VR but the point of this rig is to be able to use 3 monitors with racing games. I've read through all the ranking forums and build guides many times which is how I came to this configuration, but I just can's settle on a GPU (some have temp issues, etc but I don't think I will be OCing, the price is the killer for me, was looking in the $400max range but looks like I need to up it to about $600max, also a lot are out of stock) . I also would like to know if my current rig could be upgraded sufficiently with a nice card or if this new build is really necessary - current rig can barely handle one monitor with low graphics. GPU: Sapphire Radeon HD 7850 2GB OC Edition (X2 but removed second, degraded performance if anything)

Yes Seasonic! Apologies. Everyone has been pushing me toward intel, I heard Ryzen didn't live up to the hype? Why pushing toward Ryzen? How about the GPU? Thanks for the response!
