Haven't built a computer in years and it seems like I missed a lot....

I bough the Corsair HX1000i and the last time I bought a PSU, the 24 pin connector was 24 pin connector. Why on one side there is a 24pin connector and the other 24 but 4 is not attacked to the 20? My motherboard has 24 pins (x370 Tachi AsRock). So I plug the 24 pin connector in the 24pin socket on the MB and the part that has 24 but 4 is not attacked (where it's inserted) goes into the PSU?

I saw in the PSU manual:
The main 24-pin power cable has a detachable 4-pin mechanism in order to support
either a 24-pin or a 20-pin socket on the motherboard.
A. If your motherboard has a 24-pin socket, you may connect the 24-pin main
power cable from the power supply directly to your motherboard.
B. If your motherboard has a 20-pin socket, you must detach the four-pin
cable from the 24-pin connector, and then plug the 20-pin cable onto your
motherboard without connecting the four-pin connector.
4. Connect the eight-pin +12V (EPS12V) cable to the motherboard.
A. If your motherboard has an eight-pin +12V socket, connect the eight-pin
cable directly to your motherboard.
B. If your motherboard has a four-pin socket, detach the four-pin from the
eight-pin cable, and then plug this four-pin cable directly to your motherboard.

On the modular cables; there is an empty hole where the pins on the motherboard plug in. Is this the end that is plugged into the PSU? The ground?

Not sure I understand properly so here goes.
What you have is a modular power supply where you only plug in what you need to the power supply. Most likely the 24 pin connects to the power supply and the 20+4 connects to the motherboard. The 20+4 IS a 20+4 because some time ago now, Motherboards had only the 20 pin ATX connector. Then, some motherboards had the 20 pin ATX and the 4 pin supplement separate. MOST motherboards now the 20 and 4 have been joined into a 24.
Plug the 20pin where it fits and the 4 next to it where it fits.

Exactly, I have the modular power supply. When I opened the bag of goodies) the power cables, I was hunting for the ATX power cable which is easy to spot. When I took it out of the bag I saw a cable with 14+10 (labeled type 3) and on the other side 24. My MB's ATX socket has 24pins. Which goes which. I don't want to fry anthing

There is also a 8pin which is the 12v, is that the PSU cable labeled CPU? Seems like labeling changed a little but as well.

I really feel dumb but I noticed on the modular cables; on one end, there seems to be an empty spot. Is that the ground for each cable?

The 14+10 goes at the psu side,the 24 goes at the motherboard side.
