What is the best Nvidia 1080 graphics card under £600?

if you purely want to keep it under £600 and not necessarily the cheapest under £600, then from my experience either EVGA or Asus Strix are great options

EVGA - very well made, good coolers, excellent aftercare/warranty service
Asus Strix - also very well made, but one of the best sound/temp performing air coolers on the market

As mentioned above, the actual processing performance between them is pretty close depending on the clock settings the manufacturer has applied as stock
every GPU variant overall perform at about more or less 5% against each other (except when there are different fan number, most of the time the difference aren't too big though)

the big difference u'll see is:
cooling solution + fan count
model
support from the brand

spec-wise, they're all the same, as all of them are made by Nvidia [refering to the chip] (performance difference are caused by different model, the fan design, PCB design, the factory's overclock, etc stuff like that)

so for recommendation:
get the cheapest (for those with tight budget) [like me :(]
or
get the model u want (for those who prefer/prioritize aesthetic)
or
get the model that'll fit your case (for those who upgrades their GPU while using a small case perhaps)
